  1. Add all ingredients to a jar or bowl and mix well using a whisk.

  2. Cover and refrigerate overnight or for a minimum of 2 hours.

  3. Heat 1 teaspoon of oil in a small pan.

  4. Once the oil is hot, add the raw peanuts.

  5. When the peanuts are lightly fried, add the mustard seeds, cumin seeds, chana dal, urad dal, and red chili. Cook until the dals turn light brown, being careful not to burn. It's a simple process; just watch the color change. Add the green chili, curry leaves, and ginger, and cook for 30 seconds.

  6. Turn off the stove and pour the tempering over the yogurt chia mix.

  7. You can also wait to add the tempering to the yogurt until you are ready to eat.
