Three Vegetable Gratin sides
  1. Butter a skillet and preheat the oven to 375°F

  2. Warm the cream with garlic, thyme, paprika, nutmeg, salt, and pepper

  3. Melt in ⅔ of the cheddar into the warm cream

  4. Layer all the sliced veggies in the skillet and pour the warm cream over top

  5. Cover and bake for 45 minutes

  6. Uncover, add remaining cheese, and bake 20–25 minutes until golden and tender

  7. Rest for 10 minutes, garnish with parsley, and serve
