  1. Preheat your air fryer to 200°C (400°F).

  2. Slice the zucchini and onion. Place them in the air fryer basket and cook for 15 minutes, adding halved cherry tomatoes halfway through.

  3. While the veggies are roasting, finely chop the spinach.

  4. In a bowl, combine the eggs, ground pepper, dried oregano, and the chopped spinach.

  5. Whisk everything together until well mixed.

  6. Once roasted, transfer the vegetables to a greased, air-fryer-safe baking dish.

  7. Pour the egg mixture over the vegetables.

  8. Air fry at 180°C (350°F) for about 17 minutes.

  9. With 6-8 minutes left, sprinkle the feta cheese on top.

  10. With 1-2 minutes left, add the grated Parmesan cheese.
