Green Chile Pork Stew - Instant Pot
  1. Cut pork into 1-inch cubes, coat with flour, and season with salt and pepper

  2. Turn the Instant Pot on to the 'saute' function and add the olive oil. When the oil starts to shimmer and the pot is hot, add the pork, and brown on all sides - about 2 minutes per side. (You might need to do this in two batches to prevent overcrowding - and to better brown the meat.) Set browned pork aside.

  3. With the Instant Pot still on the saute function, add onions and garlic. Cook until they begin to soften, about 4 minutes.

  4. Hit the 'Cancel' button on the Instant Pot. Add the browned pork back into the pot along with remaining ingredients. Stir to combine.

  5. Secure the lid on your Instant Pot set on high pressure cook for 35 minutes. When the cook time is complete, carefully release the pressure, then open the lid.

  6. Thicken with a corn starch slurry (about 2 T corn starch in a cup of water)

  7. You can either serve as is, or garnish with Cilantro leaves, shredded cabbage, cheese (Cojita, Jack, or cheddar), or diced avocados.
