Ginger Sticky Pudding with Warm Lemon Sauce
  1. Preheat oven to 175°C (350°F). Grease a 20 cm (8-inch) square baking dish or similar-size pan.

  2. In a large bowl, cream the butter and brown sugar until fluffy.

  3. Add eggs one at a time, mixing well. Stir in the molasses.

  4. In a separate bowl, whisk together flour, baking soda, baking powder, ginger, cinnamon, cloves, and salt.

  5. Add the dry ingredients to the wet mixture alternately with milk, beginning and ending with the dry. Mix until smooth.

  6. Pour the batter into the prepared baking dish and bake for 30–35 minutes or until a toothpick comes out clean.

  7. While the pudding bakes, make the lemon sauce: Combine water, sugar, butter, lemon zest, and lemon juice in a saucepan. Bring to a simmer over medium heat.

  8. Stir in the cornstarch slurry and cook for 1–2 minutes, until slightly thickened. Remove from heat.

  9. Serve pudding warm, spooned with generous amounts of the warm lemon sauce.
