Mix water, honey and olive oil in a jug or bowl.
In a separate large bowl, mix instant yeast and flour.
Pour water mix in with your flour mix and stir with a wooden spoon, then mix with your hands until a dough forms. Knead for 5 minutes (flour your kitchen bench with bread or plain/all-purpose flour as needed). Place a teatowel over your bowl and rest for 15 minutes.
Grate your cheese and cut your ham while your dough rests.
Preheat your oven to 200C (fan-forced).
Once rested (using the same floured surface to prevent sticking), cut your dough in half, then roll out each piece into a rough rectangle, about 3-4mm thick.
Cover each rectangle in pizza sauce, one cup of plant-based ham and one cup of grated mozzarella.
Roll up, pinching a seam to join, and cut into 2.5cm pieces.
Place on a lined baking tray, and top with remaining mozzarella. Bake at 200C fan-forced for 20-25 minutes, or until tops are melting and starting to turn golden brown.
Serve warm - you can also heat up the remaining pizza sauce to dip into the rolls.
