Spread 2 tablespoons olive oil or use spray at the bottom of an 8x13 inch baking sheet
Take out each phylo dough sheet from the package and squeeze it gently to fit it in the baking sheet
Continue with the rest of the sheets and make sure the bottom of the dish is covered
Drizzle 2 tablespoons olive oil or spray on top and bake at 375°F for 15 minutes
While phylo is baking, scramble 5 eggs and season with salt and pepper
Add to the eggs the sliced olives, halved cherry tomatoes, ½ cup shredded cheese, crumbled feta, salt, and pepper, then mix
Remove the phylo dough from the oven and spread the egg mixture evenly on the baked phylo sheets
Season with salt, pepper and dried oregano
Sprinkle the ¼ cup shredded cheese on top
Bake at 375°F for another 20 minutes
Remove from oven, finish with salt and pepper, and serve
