  1. Marinate pork loin with soy sauce, white pepper, salt, water, and cornstarch

  2. Prepare watercress by cleaning and trimming

  3. Slice ginger into 4-5 slices

  4. In a pot, combine chicken broth and water

  5. Add marinated pork loin, dried scallops, and ginger slices to the broth

  6. Bring to a boil and simmer until pork is cooked through

  7. Add watercress to the pot

  8. Simmer until watercress is tender

  9. Serve hot
