Ginger Garlic Scallion Chicken Rice
  1. Slice boneless chicken thighs into bite-sized pieces

  2. Marinate chicken with light soy sauce, oyster sauce, shaoxing huadiao wine, and white pepper powder for 20 minutes

  3. Add slightly less water than the usual 1:1 rice to water ratio to the rice cooker

  4. Place marinated chicken on top of the rice

  5. Cook in rice cooker

  6. While rice is cooking, prepare ginger garlic scallion oil sauce by mincing ginger and garlic, mixing with salt

  7. Heat cooking oil until hot and pour over the ginger garlic mixture

  8. Add chopped spring onions to the oil sauce

  9. When rice is cooked, spread the ginger garlic scallion oil sauce on top of the chicken rice

  10. Mix well and serve
