Mexican chicken bowls

Ingredients

▪️750g chicken breast

▪️300g capsicum in any colour you like

▪️100g onion

▪️160g tin corn kernels (sweetcorn)

▪️250g packet microwave long grain rice

▪️1 sachet fajita seasoning

▪️300g jar salsa

    Method

  1. Preheat oven to 180ºC. Place chicken breasts into a glass baking dish and fill dish with water so it almost fully covers chicken. Bake in oven for 20 minutes or until chicken is cooked through.

  2. Slice capsicum and onion and add to pan on medium heat until onion is browned.

  3. Once chicken is cooked, drain water and use two forks to shred. Heat rice according to directions on the packet. Add this to the pan with capsicum and onion, along with chicken, corn, fajita seasoning and salsa. Stir well and simmer for 10 minutes to allow flavours to soak through.
