Apple Pecan Cake With Caramel Glaze
  1. Preheat Oven & Prepare Pan

  2. Preheat oven to 325°F (163°C). Grease a 9x13-inch baking pan or spray with non-stick baking spray.

  3. Mix Dry Ingredients

  4. In a large mixing bowl, whisk together flour, sugar, baking soda, salt, and cinnamon.

  5. Add Wet Ingredients

  6. Add the vegetable oil, eggs, and vanilla. Mix with a wooden spoon or spatula until combined. The batter will be thick.

  7. Fold in Apples & Pecans

  8. Gently fold in the chopped apples and pecans until evenly distributed.

  9. Pour batter into prepared pan. Smooth the top and bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.

  10. Prepare the Caramel Glaze

  11. While the cake is baking or just after it comes out, make the glaze:In a saucepan over medium heat, melt butter, add brown sugar and cream, and stir. Bring to a gentle boil and cook for 2–3 minutes, stirring constantly. Remove from heat and stir in vanilla.

  12. Pour Over Warm Cake

  13. While the cake is still warm, pour the glaze evenly over the top. Let it soak in and set slightly before serving.
