Thai-style Peanut Red Curry Meatballs
  1. Mix chicken mince with egg, panko, chopped chilli, minced garlic, ginger, and coriander to form meatball mixture

  2. Roll mixture into meatballs

  3. Cook meatballs until browned

  4. In a pan, combine peanut butter, red curry paste, and coconut milk

  5. Add cooked meatballs to the curry sauce

  6. Add fish sauce and sugar to the curry

  7. Add mange tout and onion to the pan

  8. Simmer until vegetables are cooked

  9. Finish with lime juice

  10. Serve over rice and garnish with peanuts
