Bean Brownie Muffins
  1. Preheat oven to 350°F, rack in the middle.

  2. Process rinsed beans and oil in a food processor until smooth.

  3. Add eggs, vanilla, and maple/agave syrup. Blend until combined.

  4. Whisk flour, cacao powder, baking powder, and salt in a large bowl.

  5. Pour bean mixture into the dry mix, stir with a spatula until just combined.

  6. Line a muffin pan, divide batter evenly into cups.

  7. Sprinkle chocolate chips on top.

  8. Bake about 17 minutes — centers will be soft when pressed, they firm up as they cool.

  9. Cool on a wire rack. Store airtight in the fridge up to 5 days or freeze up to 3 months. Best eaten chilled.
