In a bowl, whisk egg and sugar till light and slightly creamy
Add oil, milk, and vanilla essence. Mix well
In another bowl, sift flour, baking powder, baking soda, and salt
Add dry ingredients to wet mixture
Gently fold (do not overmix, batter should be smooth)
Line muffin tray with paper liners
Fill each cup ¾ full
Bake in preheated oven at 180°C for 18–22 minutes
Check with toothpick → should come clean
