Combine satay sauce ingredients: 3 shallots, sliced; peanut butter, about 1 tbsp (Skippy); soy sauce, about 1 tsp (Lee Kum Kee); sweet soy sauce, about 1 tsp (Lee Kum Kee); rice vinegar, about ½ tsp (Din Tai Fung); a pinch of ground black pepper; water, about 50cc.
Prepare beef rolls with enoki mushrooms.
Serve with fresh chopped green onions & red chilies and crushed toasted sesame seeds.
