How To Use Your Gas Grill As A Smoker
  1. Place 1 to 2 cups of wood chips in a folded 8" x4" packet of heavy-duty aluminum foil.

  2. Soaking the chips for 15 min then draining makes them last longer.

  3. Cut slits in the packet to allow smoke to escape.

  4. Place the packet over your primary burner on the grill while it's off. Turn on all burners and let the grill preheat until that packet is smoking which should take about 15 min.

  5. Typically I will leave the primary burner turned on and turn off other burners. Then add your food to the cooler side of the grill so it can slowly smoke.

  6. If it looks pale at the end of the smoking time, move it over to the hot side of the grill to char!
