Instructions:

In a bowl, combine the flour, starch, hazelnut flour, powdered sugar, and baking powder. Mix well.

Then add the butter, egg yolk, and milk on top of the dry mixture and knead quickly. Wrap the dough in cling film and let it rest in the refrigerator for at least 1 hour—this helps the dough hold its shape better.

While the dough is resting, start preparing the apple filling.

For the Filling:

Wash, peel, and core the apples. Cut them into small pieces and pulse them in a food processor until finely chopped—be careful not to puree them.

Put the apples in a saucepan, add the sugar and lemon juice, and cook for 5–10 minutes until the mixture reduces and the liquid evaporates. Once it's done, remove it from the heat and let it cool. (Making the filling a day ahead gives better results.)

Take the rested dough out of the fridge and divide it into 18 pieces. (You can find shaping instructions in the video. You can also use a tablespoon to shape them if you’d like.)

Place the prepared cookies onto a baking tray lined with parchment paper. Bake in a preheated oven at 160°C (320°F) until the tops are golden brown.

Once baked, remove from the oven and let them cool. Dust with powdered sugar and serve.
