Easy Organic Vegetable Pie
  1. Preheat oven to 375F.

  2. Line a 9x9 pan with oversized parchment paper.

  3. Mix all the ingredients together, except the 1 cup of Parmigiana Reggiano for the top.

  4. Add the ½ cup of Parmigiana Reggiano and mix.

  5. Pour the mixture into the prepared pan.

  6. Sprinkle the remaining 1 cup of Parmigiana Reggiano on top.

  7. Bake for 15-25 minutes until the vegetables are cooked to your desired texture and the top is browned.

  8. Serve warm.
