Mexican Rice
  1. Pour the 2-3 tablespoons of oil into the bottom of a small pot (just enough to cover the bottom of the pot) and turn the heat up to one notch past medium.

  2. Measure out 1 cup of jasmine rice and pour it into the pot with the oil.

  3. Toast the rice until it gets lightly browned and starts to give off a toasted aroma. This should take 5-ish minutes.

  4. While the rice is toasting, combine the 1 ¾ cups of water with the seasonings listed. The seasonings can also be customized to whatever the meal needs, but the boullions need to be included.

  5. Pour the water and seasoning mixture over the rice and bring to a boil. Once the rice starts to boil, the heat can be lowered to low and the lid placed on the pot the steam the rice.

  6. Set a timer for 10 minutes and don't touch the rice at all. Once the 10 minutes are up, take a peek under the lid to see if the rice is cooked completely or needs more time to steam or more water added.

  7. After the rice is cooked, it is best for it to sit off the burner with the lid on for 5-10 minutes to fluff up.

  8. After the rice has set, use a fork to fluff/separate the rice and it is ready to serve.
