Stir fry
Rice1 cup brown jasmine rice or black
Dice all vegetables into bite-size pieces.
Cut tempeh into 1-inch-long rectangles.
Heat olive oil in a skillet over medium heat.
Add tempeh, and cook until golden brown.
Add vegetables and soy sauce.
Stir fry until vegetables are tender, about 5 minutes.
To cook rice, bring coconut milk and water to a boil in a medium saucepan.
Add rice and reduce heat to low.
Cook until all liquid is absorbed, about 25 minutes.
