Creamy Tuscan Tortellini Soup
  1. Chop up one leek, one stock of celery, half an onion and three cloves of garlic.

  2. Get some olive oil and butter going in a pot over medium heat and start sauteing these until they're softened for about five minutes.

  3. Add some white wine (optional).

  4. Add good quality crushed tomatoes and a box of broth.

  5. Throw in a Parmesan rind and let this simmer for about 30 minutes.

  6. Add in the tortellini and then some heavy cream.

  7. Add the chopped rotisserie chicken and the chopped kale.

  8. Let this all come together.

  9. Dish it up with some shaved Parmesan on top, some red pepper flakes, basil and black pepper.
