Homemade Chicken Salami
  1. Preheat your oven to 170°C /338°F.

  2. In a food processor blend the meat until minced.

  3. Add it to a large bowl together with the seasonings and pour in the stock. Mix until well combined.

  4. Take a large piece of parchment paper. Shape the chicken mince in the form of a log, sprinkle with more paprika and wrap it tight in the parchment paper. Seal by twisting like a candy and tie with some string.

  5. Put in a baking tray and bake for about 1h-1h10m (I baked mine 1 hour and 10 minutes).

  6. Let it cool down, cut in slices and serve as desired.
