In a large mixing bowl, cream together the softened butter and cream cheese until light and fluffy.
Add the sugar, egg, and vanilla extract to the creamed mixture, and mix until well combined.
Add the flour, baking powder, and salt, mixing until just combined. Chill the dough for at least 15 minutes.
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
Place the crushed graham crackers in a shallow dish.
Use a spoon to scoop out portions of dough and roll them into balls, then coat them in the crushed graham crackers.
Place the coated dough balls onto the prepared baking sheets, leaving space between each one.
Use your thumb or the back of a spoon to create a small indentation in the center of each dough ball.
Bake for 10-12 minutes, or until the edges are lightly golden.
Allow the cookies to cool on the baking sheets for a few minutes before adding the filling.
