Adas Polo (Elham recipe)
  1. Rinse basmati rice

  2. Add lots of salt (2 T?)

  3. Let salted rice sit for 3-4 hours

  4. Rinse out salty water

  5. add water, turmeric and cook

  6. When 95% cooked, rinse out again

  7. make pot hot, put 2T oil once hot, place tadic supplies, medium-high temp.

  8. put layer of rice, then layer of rice+lentil mixture (make sure they're not too wet), make dome

  9. put some chicken w/ bone in dome, turn down to medium

  10. ensure steam is going, make sure it's hot/tadic going, add extra oil to the sides

  11. after a minute, add towel wrap

  12. after another minute, turn heat to low, cook for 1hr ish

  1. Take skin off

  2. Cut it apart

  3. Onion, 2 uncut garlic, turmeric, chili

  4. cook for 1 hr - don't add water

  5. add 2 limes

  1. 1-1.5c lentils, turmeric, water

  2. once cooked, add 1 lime

  1. Sweet onion

  2. cook w/o oil for like 1hr

  3. add oil, golden rasins, walnuts, turmeric, saffron
