Preheat oven to 400 degrees F and line a large baking sheet with parchment paper.
Wash and peel the carrots, then cut them in half horizontally and then vertically in half.
Place the carrot halves in between chopsticks and slice them evenly, making sure not to slice all the way through.
Brush 1.5 tbsp of oil on the baking sheet.
In a small bowl, mix the Parmesan cheese and seasonings.
Evenly spread the Parmesan mixture all over the baking sheet, focusing on the areas where you brushed the oil.
Place the carrots directly on top of the cheese.
Mix the other 1.5 tbsp of oil with 2 tbsp of melted butter and brush all the tops and sides of the carrots.
Bake for 35-40 minutes or until fork tender.
Grate more Parmesan cheese on top and add a good handful of chopped parsley and mint.
Serve with your favorite dipping sauce.
