Anti-inflammatory Turmeric Chicken Soup
  1. Heat olive oil in a large pot and sauté onions, leeks, carrots, celery, and salt until softened.

  2. Add garlic, turmeric, and poultry seasoning; cook until fragrant (about 1 minute).

  3. Pour in chicken broth, add chicken, and bring to a simmer until chicken is fully cooked.

  4. Remove chicken, shred it, then return to pot with peas and parsley, and heat through.

  5. Season with salt and pepper, garnish with additional parsley, and serve hot.
