Schinkenflekerl: German Macaroni And Cheese With Ham
  1. Preheat oven to 325 degrees

  2. Make homemade noodles or boil 1 lb of flat egg noodles, drain and cool

  3. Place chunks of ham, sausage, and onion in a food processor, grinder and pulse till you have a coarse grind

  4. Lightly sauté the meat mixture till the onions are soft

  5. Start with about ⅓ of the noodles and put a bottom layer in a greased large baking dish

  6. Then layer ½ of the meat mix

  7. Another layer of noodles

  8. Then layer the other ½ of the meat mix

  9. Mix well the sour cream or milk or combination of the eggs and nutmeg

  10. Pour the mix over the casserole and push lightly the noodles with a spoon and shake pan so it seeps to the bottom

  11. To make fresh bread crumbs, process 2 slices of bread and chunks of cheese in a food processor

  12. Top the casserole with the crumbs and sprinkle with paprika

  13. Slice the butter and sprinkle on top

  14. Bake for 30 min at 325 degrees and then turn up the oven to 350 degrees for another 15 to 30 min until it is bubbling hot and lightly browned on top

  15. Serve with a salad for a complete meal
