In a small bowl, combine the miso, soy sauce, vinegar, and sesame oil (if using). Mix well.
In a large mixing bowl, combine the carrots, broccoli, and daikon. Pour the miso mixture over the vegetables and toss with tongs to coat completely.
Preheat the air fryer to 330°F for 5 minutes.
Transfer the vegetables to the air fryer basket and cook for 25 minutes, shaking every 5 minutes.
