  1. Coat the aubergine slices in the marinade and leave for at least 10–15 minutes

  2. Coat each slice in the dredge then press into the panko until fully coated

  3. Pan-fry in a little oil over medium heat until golden and crispy, or alternatively air fry

  4. Pile into soft bread with lettuce, tomato and mayo or avocado
