Roughly chop or pulse nuts of choice.
Mix nuts with raw seeds and desiccated coconut in a bowl.
Melt coconut oil, then mix with vanilla extract and maple syrup/agave in a bowl.
Pour wet ingredients over dry ingredients and mix.
Spread mixture on a lined baking tray, sprinkle with ground cinnamon, and roast.
After 20 minutes, stir the mixture and return to the oven for another 10–15 minutes until golden and crunchy.
Remove from the oven and let it cool before storing in an air-tight container.
