High-protein Mac & Cheese
  1. Bring a pot of salted water to a boil and cook the macaroni according to the package instructions. Before draining, reserve about 1 cup of pasta water.

  2. Add the cottage cheese to a blender or food processor and blend until completely smooth. If the mixture is too thick, add a small splash of water.

  3. Transfer the blended cottage cheese to a saucepan over medium-low heat. Gradually add some of the reserved pasta water until you reach your desired sauce consistency.

  4. Stir in the cheddar, garlic powder, MSG, and salt, mixing until the cheese melts and everything is fully combined. Let the sauce come to a light simmer.

  5. Add the cooked pasta to the sauce and toss until evenly coated. Serve and enjoy.
