Mix together ground beef, ground lamb, seasonings, and yogurt
Roll the meat mixture really thin between two pieces of parchment paper
Place the rolled meat on a tray and roll it over itself a couple times
Move the rolled meat to one side of the tray
Load up the other side of the tray with vegetables
Bake at 400 degrees Fahrenheit for about 20 minutes
Remove from oven and drain all the liquid that has gathered in the pan
Put back in the oven for about 10 more minutes
Shred the meat and put it back in the oven under the broiler for about 5 minutes
Assemble with tzatziki and roasted vegetables
Top with pickled red onions and feta cheese
