Sun-dried Tomato Frittata
  1. Preheat oven to 425°.

  2. Whisk eggs and cream together in a bowl and set aside.

  3. Sauté the onion and garlic with a little bit of olive oil in an oven-safe skillet for 2-3 minutes; then, add the sun dried tomatoes and arugula and sauté for 1 minute, then pour in the egg mixture, sprinkle with salt and pepper and pan fry for 1 minute.

  4. Remove pan from the heat, sprinkle feta cheese on top and then place the skillet in the oven and bake the frittata for 10-14 minutes, or until the edges have set and the middle is cooked through.

  5. Wait a few minutes, then slice frittata and enjoy!
