Start by grating the red onion or blitzing and add to a bowl. Then finely chop the fresh parsley and mint and add to the same bowl.
Add the egg, breadcrumbs, beef mince and seasoning along to the bowl and mix until well combined.
Take about a tablespoon of the mixture and flatten. Then place a cube of the Kefalotyri in the middle, and roll the mince into a ball to cover. Smooth the edges using the palm of your hand to form a flat burger shape. Repeat this with the remaining mince meat.
Over a high heat, add the olive oil to a frying pan. After 2 minutes, or until it’s heated up (you can test this by poking a wooden spoon in the oil and seeing if it fizzes up around it), carefully place the burgers.
Cook for 3-4 minutes on both sides (a total of 7-8 minutes) until crispy and golden.
Once cooked, place the burgers on a plate lined with kitchen roll to drain the excess oil.
