Feta, Spinach & Pine Nuts Florentine Rolls
  1. Preheat oven to 375 degrees.

  2. Spray twelve muffin cups with non-stick cooking spray; set aside.

  3. In a large skillet cook green onions and garlic in 1 tablespoon of the oil until tender.

  4. Add spinach; cook and stir over medium heat just until wilted.

  5. Season with salt and pepper.

  6. Drain off excess liquid.

  7. Set aside to cool.

  8. On a well-floured surface, unroll pizza dough and shape into a 12x8-inch rectangle.

  9. Spread spinach mixture to within 1 inch of the edges of dough.

  10. Sprinkle with feta cheese and pine nuts.

  11. Starting with one of the long sides, roll dough into a spiral.

  12. Slice roll into 12 pieces.

  13. Place cut side up in prepared muffin cups.

  14. Brush with butter and sprinkle with Parmesan cheese.

  15. Bake for 18 to 20 minutes or until golden brown.

  16. Let stand in muffin cups for 2 minutes.

  17. Carefully remove from cups and serve warm.
