Oatmeal Cream Pie Cookies
  1. Preheat oven to 350°F and line baking sheets with parchment or silicone mats

  2. Beat cold, cubed butter and salt in a mixer until softened, about 1–2 minutes

  3. Add dark brown sugar and beat until light and fluffy, about 2–3 minutes

  4. Mix in vanilla and eggs, one at a time, until combined

  5. Add baking soda and cinnamon; mix to combine

  6. Add half the flour and half the oats, mix, scrape bowl, then add remaining flour and oats, mixing just until combined

  7. Scoop dough onto prepared sheets (about 2 tbsp each, 2 inches apart) and gently flatten

  8. Bake 9–12 minutes, until edges are lightly browned but centers still look soft

  9. Cool on pan 5 minutes, then transfer to a rack

  10. Beat room temperature butter and a pinch of salt until smooth, about 2 minutes

  11. Add powdered sugar and vanilla; beat until fluffy, 2–3 minutes

  12. Add marshmallow fluff and beat until light and creamy

  13. Sandwich filling between cooled cookies
