Preheat oven to 350°F and line baking sheets with parchment or silicone mats
Beat cold, cubed butter and salt in a mixer until softened, about 1–2 minutes
Add dark brown sugar and beat until light and fluffy, about 2–3 minutes
Mix in vanilla and eggs, one at a time, until combined
Add baking soda and cinnamon; mix to combine
Add half the flour and half the oats, mix, scrape bowl, then add remaining flour and oats, mixing just until combined
Scoop dough onto prepared sheets (about 2 tbsp each, 2 inches apart) and gently flatten
Bake 9–12 minutes, until edges are lightly browned but centers still look soft
Cool on pan 5 minutes, then transfer to a rack
Beat room temperature butter and a pinch of salt until smooth, about 2 minutes
Add powdered sugar and vanilla; beat until fluffy, 2–3 minutes
Add marshmallow fluff and beat until light and creamy
Sandwich filling between cooled cookies
