In a medium pan, heat the oil and soy sauce or tamari over a medium–low heat. 2. When warm but not boiling, add the garlic, ginger, scallions, crushed red chili (pepper) flakes, cinnamon stick and star anise and stir to combine. 3. Add the mushrooms, stir, and reduce to low heat. Cook for 10–12 minutes, stirring occasionally, until the mushrooms have softened and the mixture has reduced and thickened. 4. Take off the heat and remove the cinnamon stick and star anise. Season with black pepper.
