Activate Yeast: Heat milk to 100–110 °F. Stir in yeast and a pinch of sugar. Let rest 5–10 minutes until bubbly and foamy.
Mix Dough: Whisk yeast mixture with sugar, melted butter, eggs, and vanilla until smooth.
Add Flour & Salt: Stir in flour and salt. Knead (by hand or mixer) for 8–10 minutes until dough is elastic and slightly tacky.
First Rise: Shape dough into a ball in a greased bowl. Cover and let rise 60–90 minutes at room temp until doubled.
Prepare Filling: While dough rises, mix brown sugar, cinnamon, and espresso powder in a bowl. Set aside room‑temp butter to spread.
Roll Out: Punch dough down. Roll to a 12×18″ rectangle on a lightly floured surface.
Assemble: Spread the room‑temp butter evenly over dough with your hands. Sprinkle filling mixture and press/rub gently to combine into butter.
Cut & Pan: Slice into 12 even pieces using a pizza cutter or sharp knife. Then roll each individual cinnamon roll up! I find this method a LOT easier. Optionally, line 9×13 pan with 2 Tbsp brown sugar for extra goo. Place rolls snugly in pan.
Second Rise: Cover pan and let rolls rise 30 minutes until puffy.
Optional Pre‑bake Drizzle: Combine ⅓ cup heavy cream with ½ tsp espresso powder and drizzle over rolls for added goo.
Bake: Preheat oven to 350 °F (175 °C). Bake for 20–25 minutes until golden and just set.
Make Icing: While rolls bake, whisk cold mascarpone cheese, powdered sugar, and vanilla until smooth. Slowly pour in heavy cream while whipping until mixture is light and fluffy.
Finish: As soon as rolls come out, generously frost with mascarpone icing. Dust with cocoa powder. Serve warm and dreamy.
