Cowboy Caviar
  1. Chop all bell peppers (1 of each color) and red onion

  2. Drain all canned beans and corn

  3. Chop cilantro and crumble feta cheese

  4. In a bowl, combine juice of 3 limes with ¾ cup extra virgin olive oil

  5. Add ¼ cup red wine vinegar to the dressing

  6. Mix in 1 tablespoon chili powder, salt, pepper, and garlic mix

  7. Add 1 tablespoon garlic powder and ½ tablespoon honey

  8. Add a splash of garlic oil and 1 teaspoon salt to dressing

  9. Combine all chopped vegetables, beans, corn, cilantro, and feta in a large bowl

  10. Pour dressing over the mixture and toss well

  11. Serve with lime tortilla chips

  12. Store in refrigerator for up to 3-4 days
