Crockpot Lemon Chicken And Rice
  1. Season the chicken thighs generously with salt and pepper. Drizzle olive oil in a skillet on high heat. Once hot, place chicken in skillet and sear for 2 minutes. Flip and sear the other side for another 2 minutes. Remove from heat and set aside.

  2. In a crockpot, add the rest of the ingredients: rice, onion, garlic, oregano, basil, salt/pepper, lemon zest, lemon juice, chicken broth. Mix all together.

  3. Place seared chicken on top of rice and liquid mixture. Cover and set on high for 3.5 hours.

  4. Once done, fluff rice with a fork and serve! Add a veggie to the side and enjoy!
