Tender Beef Cheeks
  1. Preheat oven to 150°C / 130°C fan forced

  2. Heat a splash of olive oil in a Dutch oven

  3. Season meat on all sides with salt and pepper (be generous) and sear beef all sides. Put aside

  4. Add a little more oil if required & gently sauté onion and garlic

  5. Add wine to deglaze

  6. Transfer beef back, add stock and tomatoes, stir

  7. Leave lid slightly ajar and cook 3 ¼ - 4 hours, stirring occasionally

  8. Taste & adjust seasoning

  9. Serve over pappardelle or couscous

  10. Top with Italian parsley & fresh grated parmesan
