Sushi Bake
  1. Mix rice with mirin and rice vinegar

  2. Toss cucumbers with rice vinegar, salt, and sugar

  3. Cube shrimp and toss with kewpie, sriracha, scallions, sesame oil, soy sauce, and salt. Bake at 400F for 15 minutes

  4. Add avocado and edamame

  5. Top with furikake and togarashi, serve with quartered nori sheets
