Mix minced chicken, garlic, chopped coriander, soy sauce and white pepper powder in a bowl. Set it aside.
Heat up oil in a pot over medium heat. Once the oil is hot enough, add shallot and minced garlic. Stir fry until some garlic becomes golden.
Add coriander roots, water and chicken stock powder.
Once the chicken broth is boiling, add shredded cabbage and carrot.
Shape the marinated minced chicken into balls or any shape you want. Put the chicken meatballs into the soup until you finish the mixture.
Add glass noodles and tofu. Cook until the meatball is done and the glass noodles have reached your desired texture.
Season with fish sauce and white pepper powder. Garnish with spring onions or coriander, and enjoy!
