Steamed Bbq Pork Buns - 叉燒包 - Char Siu Bao by Steve Owens
  1. Warm the milk for 30 seconds in the microwave, then add the instant yeast and the smaller amount of sugar. Set aside for 20 minutes.

  2. In a mixing bowl, add the flour, the remaining sugar, salt, and oil. Pour in the yeast-milk mixture and mix with a fork.

  3. Knead the dough for 5-10 minutes until smooth and elastic. Place in an oiled bowl, cover, and let rise for at least 1 hour.

  4. Prepare the filling by dicing the cooked BBQ pork and chives/spring onions. Mix with 1 tablespoon each of light soy sauce and hoisin sauce, and optionally 1 tablespoon of sesame seeds.

  5. Divide the dough into pieces according to portions chosen. Roll each piece into a circle, place a tablespoon+ of filling in the center, then gather the edges and pleat to form a bun.

  6. Place the buns in a steamer basket lined with parchment paper. Steam for 20 minutes.
