One-tray Red Curry Dumpling Soup
  1. Preheat your oven to 200°C (fan-forced).

  2. In a baking dish, whisk together the coconut milk, red curry paste, soy sauce, sesame oil, lime juice, stock, ginger, and garlic until well combined.

  3. Add in the sliced bok choy, followed by the dumplings - nestle these into the sauce in a single layer.

  4. Bake the dumpling tray for approximately 15 minutes, or until the dumplings are tender and cooked through (they should appear slightly translucent).

  5. While the dumplings bake, bring a small saucepan of water to a boil. Gently lower in the eggs and cook for 6-7 minutes for a soft-boiled yolk. Transfer to an ice bath immediately to stop cooking and make peeling easier.

  6. Serve hot, topped with a drizzle of chilli oil, sesame seeds, chopped herbs, sliced spring onions, and extra veggies of choice such as snow peas and bean shoots. Add edamame or a soft-boiled egg for an extra protein boost (optional).
