Levain Style Carrot Cake Cookies
  1. Grate carrots and mix in a tbs of sugar. Set aside to macerate.

  2. Mix sugars and cold butter till just combined.

  3. Add egg and egg yolk.

  4. Add vanilla.

  5. In a separate bowl, mix all your dry ingredients.

  6. Add dry ingredient to your wet, ½ at a time. Mix till just combined!

  7. Wring carrots as dry as possible, too much water will make your cookies very cakey.

  8. Add carrots and other mix ins. Mix till just combined.

  9. Portion into mountains (I made 12 4oz cookies, Levain does 6oz).

  10. Freeze 2-3 hours or until completely frozen.

  11. Bake at 375F for 15-18 minutes.

  12. Let cool 10-15 minutes then ENJOY!!!
