Fudgy 40 Cal Cookies
  1. Add all ingredients in a bowl and mix

  2. Refrigerate dough for minimum 1 hour

  3. Use a teaspoon and roll into 24 small cookies, flatten lightly on the pan

  4. Top with sea salt

  5. Bake for approximately 20 minutes or until fully set

  6. Let cool for an hour before removing from the pan (or refrigerate for even better results)

  7. Serve with 200g low fat cottage cheese mixed with vanilla, liquid monkfruit, and a pinch of salt, with 2-3 cookies broken on top
