Vegan coconut jam slice

    Makes 9–12 slices

  1. Preheat the oven to 180C/160C fan. Grease and line a 20x20cm baking pan.

  2. In a large bowl, combine the flour, sugar and salt. In a microwave-safe bowl in the microwave or in a saucepan on the stovetop, melt the vegan butter, then pour into the dry ingredients. With a spatula or wooden spoon, mix until combined.

  3. Press the mixture into the lined baking pan and bake for 15 to 20 minutes or until lightly golden on top, then remove from the oven.

  4. To make the top layer, melt the vegan butter. In a large bowl, combine the melted butter, coconut, cornflour and sugar, and set aside.

  5. While the slice base is still warm, spread an even layer of jam on top. Make sure the jam goes all the way to the edges and corners of the pan.

  6. Sprinkle the coconut mixture evenly over the jam, and return the slice to the oven to bake for a further 20 minutes.

  7. Allow the slice to fully cool in the pan. Carefully remove from the pan, then slice.
