Blend all of the ingredients in a high speed blender until super super smooth. If your blender sucks, soak the dates and cashews by boiling water and covering it with two cups. Let it sit for at least 20 minutes. And then blend.
If you have the silicone pan (linked in bio): melt ⅓ cup chocolate chips by putting it in the microwave in 15 second increments and mixing in between (otherwise the chocolate will get messed up). Coat the bottom of the pan with the chocolate. Then add the cashew date mixture. Freeze overnight. Then melt another ⅓ cup chocolate chips to smooth on top. This part doesn't have to be perfect bc it will be the bottom.
If you don't have a silicone pan: line a 8x8 pan with parchment paper and pour the cashew date mixture directly in. Freeze overnight. Melt all the chocolate chips by putting it in the microwave in 15 second increments and mixing in between (otherwise the chocolate will get messed up). Smooth half the chocolate on the top surface. Flip it over and smooth it on the other side. It won't be super smooth this way but still delish. And saves you from individually coating each piece in chocolate.
It hardens super quickly, so you can pop the block out and slice immediately. Sprinkle with flakey sea salt. And store in muffin liners in a container/box so they don't stick together
