High-protein Peach Fritter Pancakes
  1. Wash and dice peaches. Set aside.

  2. Mix flour and baking soda in a large bowl. Then add in Greek yogurt, eggs, butter, vanilla. Mix until well combined, but without over mixing. if using cottage cheese, blend first

  3. Gently fold the peaches into the batter.

  4. Add a little less than ¼ cup batter into a buttered & low heated skillet. Flip when bottom is browned and bubbles are forming in batter (because they are thicker than normal pancakes, i cook mine for roughly 3-4 minutes). Once flipped, gently press down, just a little & cook for an additional 3-4 minutes, or until fully cooked. Adjust heat accordingly.

  5. For the glaze, mix together powdered sugar and milk.
